Guatemalan coffee is generally known for having a low to medium level of acidity, which is one of the reasons why it is so popular among coffee enthusiasts. There are several factors that contribute to the low acidity of Guatemalan coffee:

1.     First of all, we ad Mayan Espresso™ guard carefully the flavours of our coffee, our family is formed of agricultural engineers, who have studied the science of coffee harvesting for generations, and as science grows we learn more and apply more the science of clean coffee harvesting. We do so by not using pesticides, herbicides or glyphosates, additionally, we wash our cherries with filtered water, amongst other secret procedures to maintain our coffee flavours we dry our beans under a Greenhouse environment to protect our beans flavours.

2. Growing altitude: Guatemalan coffee is typically grown at high altitudes, which can range from 4,000 to 6,000 feet above sea level. At these elevations, the coffee plants grow more slowly and develop more complex flavors, but they also tend to produce beans with lower acidity.

3. Soil composition: The volcanic soil in Guatemala, which is rich in minerals such as potassium, magnesium, and calcium, is believed to contribute to the low acidity of the coffee beans.

4. Climate: The climate in Guatemala is mild and consistent, with temperatures averaging around 70 degrees Fahrenheit throughout the year. This stable climate is thought to contribute to the low acidity of Guatemalan coffee by reducing stress on the coffee plants.

5. Coffee varieties: The coffee varieties grown in Guatemala, such as Bourbon and Anacafe 14 are known for producing beans with lower acidity compared to other varieties.

In conclusion, all of these things, the right plant, no pesticides of any type, growing conditions, right soil, high altitude and climate, clean processes, greenhouse protection and roasting as well as coffee varieties help us produce a delicious coffee with explosive flavours which is non acidic, not bitter coffee.
